Tastings will be in Gail’s Kitchen right on Atwood Avenue. We’ll travel around the equator, exploring the deep, complex flavors of six different single origin chocolates, and taste how Gail brings out those flavors in her truffles.

From the Orange Tree website: “Madison’s “Queen of Dark Chocolate” will demonstrate how to make Pate a Choux or Cream Puff Dough. With this dough, Gail will create Chocolate Éclairs with Chocolate Pastry Cream and Chocolate Glaze. Pate a Choux may also be used for making Profiteroles and as the base for Gateau Saint-Honore.”
